These casks originally held wonderfully powerful Tempranillo wine known forits deep, dark cherry and blackberry flavours. This wine is incredibly tannic so before we filled them with our spirit, we seasoned the casks with Oloroso sherry for 1 year to round off some of the harsher elements.
